LIVE FOR LIFE is pleased to welcome Smith Angus Farm to the Duke Farmers Market. Farmers, Randall and Cyndi Smith will offer the best tasting, highest quality
antibiotic-free, pastured raised, hormone-free, Angus beef beginning in July. They are a fourth generation, family owned and operated farm located in the lush green
and rolling pastures of Snow Camp, NC. We are excited about this enhancement to the market and to be able to provide Duke employees the opportunity to purchase
fresh fruits and vegetables and now healthy beef products directly from local farmers.

What precautions are being taken while offering meat at the Duke Farmers Market?
Meat is a perishable product that must be processed and stored correctly to ensure it is safe and wholesome. All meat being marketed will be obtained from an
approved farmer. This means that all meat products will be produced and packaged in an establishment under either a Federal (USDA) or State (Food Safety) Inspection Program.
Does the farmer who sells meat at the Duke Farmers market comply with state and federal laws?
Yes. Farmers who sell meat comply with state and federal laws. The farmer's meat handler's license is on file with LIVE FOR LIFE.
How will the meat products be sold?
Selling packaged meat at the Duke Farmers Market requires sanitary handling and temperature control. Packaged meats will be sold frozen.
How are the meats packaged?
Generally, meats are either wrapped in freezer paper or vacuum-packaged in heavy plastic wrap. Some farmers prefer the vacuum-packing because customers can see the
meats before they buy them. Also, vacuum-packing may better protect the quality of the meat while in the freezer.
How will the meat be transported to the Duke Farmers Market?
The product will be transported directly from the Farm to the Duke Farmers Market frozen at 0 degrees Fahrenheit.
Is the meat produced by the seller?
Yes, all meat is produced and processed by the Farmer. Their animals are Source Verified and they know where each of their animals are born (most are born right on their farm).
Will the meat be labeled and easily identified?
All products will be labeled.
How should I properly/safely store my meat purchase until I get home?
LIVE FOR LIFE and the Duke Farmers Market does NOT provide refrigeration for your meat purchases. Refrigeration and temperature control is the responsibility of the purchaser.
Ice filled coolers are recommended for transport home. In addition, insulative bags to prolong cold temperature work nicely. These are large and foil-backed and are available for purchase
in grocery stores.
What are the dietary recommendations for consuming meat products?
Lean meat is part of a healthy diet. Beef is a great source of iron, zinc, protein, vitamins B6 and B12, and niacin. On average a 3 ounce serving of a lean cut of beef contains
between 4 and 9 grams of fat(about 3 of which saturated), about 95 mg of cholesterol, less than 200 calories and about 25 grams of protein. Choose cuts that are lean.
How big is a serving of meat?
A serving of meat is three ounces. This is about the size of a deck of cards or a computer mouse.
How do I decide what choices of meat are the healthiest?
Good beef choices include: eye of round, top round, top loin, sirloin and flank steak. Make sure to trim away any visible outside fat before cooking. Make sure to keep your lean
cuts of meat lean by using low-fat cooking methods such as broiling, roasting or grilling.
